Chef + Arroces
Serious rice. Party energy.
Arroces brings restaurant-level attention to rice into public, social spaces. The food anchors the experience. Music, drinks, people, and place give it its pulse.
Paella is not the side show. Paella is the reason everyone showed up.
Arroces turns a pan of rice into an occasion. It respects Spanish technique, carries Chef Eduardo Cuenca’s Venezuelan and Barcelona history, and speaks in the visual language of New York street culture.
Chef Eduardo Cuenca
Chef Eduardo Cuenca leads Arroces with bomba rice, sofrito, stock, fire, timing, and texture at the center.
Every pop-up is built to feel open, warm, and generous — a neighborhood party that still takes the pan seriously.

Private pans
Birthdays, block parties, brand nights, backyard setups — if you’re planning something with good vibes, bring the idea.

Big pans. House music. Daylight that feels like night.
Paella Rave is Arroces NYC’s daytime food-and-music series with 8it — sixty-inch pans, rotating DJs, specialty drinks, and a crowd that shows up hungry.
Chef Eduardo Cuenca holds the rice. Guest chefs jump in for crossovers. The sound system does the rest.
The pan
Massive street paellas from Arroces, plus guest chef drops when the collab hits.
The music
Live house sets from local DJs. Daytime party energy — cold drinks, warm rice, loud speakers.
The spot
Often at Dead Letter No. 9, 63 Grand St, Williamsburg — check the next drop for the lock.
Getting in
Usually 21+. Free RSVP through community platforms like the 8it app when a date is live.
Playlists from the series. Put one on while the rice cooks — or while you wait for the next drop.
